Dietary Manager – Certified

Kenosha Estates is looking for a Certified Dietary Manager. The right candidate will be responsible for the following:

ESSENTIAL JOB FUNCTIONS

Creates dietary menu and monitors food preparation methods and portion sizes, with integration and awareness of personal resident needs. Maintains awareness of special dietary or nutritional requirements of specific residents

Complies with state and federal sanitation and applicable standards and oversees compliance of such standards by dietary staff.

Oversees the activities of all Dietary employees to ensure compliance standards are met

Inspects food, supplies, and equipment to maintain stock levels and ensure standards of quality are met

Oversees meal service while on duty and directs preparation of food and beverages

Investigates and resolves complaints regarding food quality and service

Responsible for labor and budget control for the Dietary department

Trains and oversees dietary staff on proper food preparation techniques, operation of kitchen equipment, safety procedures, sanitation, etc. to ensure quality standards and service

Schedules staff hours and coordinates assignment of dietary personnel to ensure economical use of food and timely preparation

Reports any issues or problems that may arise to the Administrator

Complies with state, federal, and all other applicable health care and safety standards

Performs other duties and tasks as assigned

REQUIREMENTS

High school diploma or equivalent; minimum of 3 years of previous experience in volume and modified diet preparation; or an equivalent combination of education and experience

Must be state approved in food handling and preparation; Certified Dietary Manager preferred

Previous experience in a long-term care or hospital setting preferred

Knowledge of Word Processing and Spreadsheet software

Ability to use pots/pans, cutlery, including knives, forks and spoons, gas/electric stove and/or oven, broilers, microwave oven, fryer, griddle, toaster, slicer, blender and other kitchen equipment

Compensation will be based on experience.

Position Details:
* Collaborates with the Dietary Manager and Registered Dietician for menus and patient specific needs.
* Maintain accurate HACCP programs, checks food temperatures from delivery through consumption.
* Ensures department practices sanitation and food safety guidelines for appropriate food handling procedures, including use of service utensils and gloves.
* Interacts with patients and staff in the serving line, offering assistance of a nutritionally balanced meal, a role model for customer service.
* Prepares snacks and nourishments according to resident food preferences and physician orders.

Requirements:
* High school diploma, GED or combination of education and relevant work experience preferred.
* Valid driver’s license
* May be required to work flexible hours and overtime.Food Safety/Sanitation certification preferred

Experience:
* Previous experience in food service, hospital experience preferred.

Position Details:
* Responsible for overseeing standards and procedures of food preparation, menu development, service, equipment, sanitation, infection control, and employee safety.
* Ensures quality of menu, food, and service. Prepares, orders, and ensures accurate and sufficient inventory.
* Keeps facility compliant with all health department, TJC, state, and federal regulations.

Requirements:
* High school diploma, GED or combination of education and relevant work experience preferred.
* Valid driver’s license and a favorable Motor Vehicle Report (MVR), along with proof of insurance when using own auto.
* Food Safety/Sanitation certification preferred.

Experience:
* Previous management experience in food service, hospital experience preferred.

Under the direction of the Dining Services Manager the Dietary Assistant is responsible for quality of service delivery during meal service for the Community.
This position is responsible for communicating with all Dining Services staff and other team members in maintaining a holistic perspective of care and services for each resident.
Essential Duties and Responsibilities
General management responsibilities include, but are not limited to the following:
Supports the development of a positive customer service culture in the dining room.
Offers evaluation on the quality of service to maximize the efficiency of meal delivery while maintaining a pleasant dining experience.
Takes beverage and food orders, delivers food, clears, cleans, sanitizes and resets tables.
Ability to understand basic kitchen equipment and how they operate.
Makes every expected effort to maintain customer satisfaction; Able to resolve dining challenges with a customer before the conclusion of the meal service.
Performs assigned side work that may include but is not limited to:
doing the dishes, re-setting the dining room, cleaning and restocking the service areas, cleaning chairs or table bases, vacuuming the floor, folding napkins, dishing salads and dressings, preparing snacks and light prep work.
